The Cookbook

binduI think I’ll adopt the term “Flexitarian” for my way of eating.  This term is described as “a primarily plant-based diet composed of grains, vegetables, and fruits, which also occasionally includes protein from lean meat, fish, poultry or dairy.”   I don’t eat very much lean meat, but I do eat a good amount of fish and poultry.  So.. this cookbook is perfect for me!  And, for those who are diet-conscious, this is a great way to grab some healty recipes that won’t compromise your diet!

After reading this cookbook cover to cover, I discovered that that you don’t have to sacrifice flavor for a healthy meal.  Rather, you can have both!  Much of the recipes in this book are too spicy for the twins.  Therefore, I wasn’t able to get around to cooking the recipes just yet (*I need an adult here to share the food with me!*).  But, I didn’t want that to prohibit me from sharing my admiration of the cookbook.  From what I can see in reading the recipes, is that you get a nice Thai/Indian feel to the dishes.  Here the recipes that I plan on preparing from the book:

* Spiced Chicken & Coconut Curry *

* Shrimp in Butter, Lime & Cilantro Sauce *

* Baked Coconut Fillet (fish) *

* Masala Chai *

* Lime Soda *

* Strawberry Kulfi *

YUMMMMM!  I’m planning on cooking the Spiced Chicken & Coconut Curry during my Christmas Eve Annual Cookoff!

    This cookbook is definitely for me!! My eating habits are very similar to yours in that I eat very little red meat; I eat mainly chicken, fish (mostly salmon) and a ton of veggies! I’ve recently started cooking dishes w/ curry in them and I LOVE them! Thanks so much for introducing the cookbook to me!! I’ve added it to my Wish List!

    This sounds great. I love Indian and Thai food so it would be right up my alley. Of course, like your twins, two of my crew are spice averse but they are getting old enough for me not to worry about what they’ll eat if I cook something they won’t try. ;-)

    We are huge fans of cumin in this house – I buy it in bulk. And it doesn’t contain one calorie! This cookbook sounds delish. But with cookbooks, I need to see and touch the thing before I buy it. I’ll have to see if they have it at the bookstore next time I go. Thanks for the tip!
