My favorite tropical getaway was a trip to St. Thomas. It was gorgeous, although much more hilly than I'd thought of. The water was crystal clear, and in the resort we stayed in, each family had their own separate house. It was truly paradise. We went on a submarine ride, which was awesome. My favorite part had to be snorkeling. We went to St. John's island, and at the public park, went snorkelng. It was my first time, and discovering that beautiful world undersea was amazing. Of course, the tropical food and the tropical love life were great also!

Caribbean Sunset

Ingredients:
3/4 ounce Malibu rum
3/4 ounce Melon liqueur
2 ounce Cranberry juice
Orange juice

Caribbean Sunset Instructions
Mix the rum and the melon liqueur, and slowly pour the cranberry juice on top until it fills half the glass. Carefully fill the remainder of the glass with orange juice, so it floats on top of the cranberry juice mixture.

I don't have any tropical recipes, I guess I need to expand my cooking skills. And I haven't been anywhere tropical - my husband was going to take me to Hawaii for our tenth anniversary last year, but that fell through.

I haven't had a girls-only vacation - how wonderful would that be! I did have a day blackberry picking with my mom and sisters while the men watched our kids (ten total between the three of us sisters). That was about two years ago. I remember that we had a fabulous time talking contantly over the top of each other's words. The most amazing thing to me was that it was the first time that all of us had been alone together for a day in about 16 years. We haven't had a day like that since, and we need to do it more often. Maybe someday, when the kids are older we can actually have a girls-only vacation.

And since I didn't really talk about a girls-only vacation, let me say that I certainly hope that 40 is the new 30, because I'm over thirty now myself!

Here's my recipe for my favorite tropical drink!

Frozen Mango Margarita

1 (10 ounce) bag frozen diced mango
1/4 cup fresh lime juice
2/3 cup tequila
2 Tablespoons orange liquor (Triple Sec)
2 Tablespoons superfine sugar
2 cups ice water

Put all of the ingredients into a blender and blend until smooth.

Thanks,
